PT 職務說明書（門市第一線 / 基礎作業 A–G） 角色定位：PT 是門市現場的「出餐與服務主力」，要做到 乾淨、快速、正確、友善，並確保每一份餐點與每一次互動符合 TG 標準。 一、任用與工作型態 1.依門市排班輪班（早／晚／尖峰），配合門市營運調度（含支援臨時代班）。 2.準時到班／下班，依規定完成交接（口頭＋交接表/群組）。 3.遵守門市工作規範：儀容（制服/帽子/口罩/指甲）、出勤、手機規範、現場安全與食安。 4.認同 TG 蔬坊品牌文化與標準流程（SOP/GHP/服務標準），願意照制度做事。 5.願意學習並接受訓練與考核（服務、製作、衛生、收班結帳等）。 二、PT 核心職責（基礎工作 A–G） 必須能獨立上線的範圍。 新人目標：依學習路徑在規定期間內完成各項上線（由店長/訓練員驗收）。 A. 清潔 開班前：工作檯面、展示冰櫃、夾具容器、冷藏/展示區外觀清潔，垃圾桶更換與備袋。 營業中：即時擦拭、維持地面乾爽不滑、污染立即處理（食材掉落/醬汁外漏）。 收班：依清潔清單完成區域清潔（檯面、器具、地面、洗手台、垃圾分類、截油槽、指定設備外觀）。 清潔標準：看得見的髒污=不合格；依門市稽核/拍照回報規定執行。 B. 服務 主動招呼與引導點餐（眼神、微笑、問候、導購主推品/加購）。 排隊尖峰維持節奏：快速回應、清楚複誦、避免顧客等待焦慮。 顧客需求處理：缺品告知、替代方案、過敏提醒（依公司話術與規範）。 正確夾取沙拉並溝通：正確的滿度及沙拉重要食材須與客人對話溝通。 C. 櫃台 正確點餐：品項/加料/備註（依門市操作方式），確認顧客需求後送單。 正確收款：現金/電子支付/百貨支付方式依規定操作。 發票/載具/收據（依門市規範），避免漏開、錯開。 遇系統異常：先照「簡易排除流程」處理，不行立即回報店長/訓練員。 D. 收班 收班前整理現場：備料盤點、消耗品補齊、垃圾處理、工作檯面回復。 交接重點：缺料/異常/未完成事項/客訴/設備問題，需清楚交代並留紀錄。 E. 結帳（帳務要對，少一塊都要追） 配合店長/訓練員進行日結流程（依門市制度）。 現金清點、短溢紀錄、單據整理（依規定放置與簽核）。 結帳原則：不猜、不省略、不用「大概」。 F. 備料 依備料SOP進行洗切、分裝、效期標示、先進先出（FIFO）。 嚴守食安：生熟分離、避免交叉污染、手套/夾具規範、溫度與效期。 份量與一致性：依克重/份量工具操作，避免「憑感覺」。 G. 開班 檢查設備狀態（冷藏/保溫/電源/簡易安全確認）。 檢查備料狀態與效期、補齊缺料（依清單）。 確認現場可營運：清潔完成、夾具齊全、包材與耗材齊全。 三、工作標準 速度：尖峰積極、能跟上現場節奏（依門市設定的目標等待時間）。 正確：點餐、收款、出餐、份量、備註不得常犯錯。 乾淨：工作區「隨手清」、收班依清單完成。 食安：效期/溫度/交叉污染零容忍（出現疑慮先停用回報）。 溝通：不隱瞞、不硬撐，異常立即回報、照流程處理。 早班：0900-1500 中班：1100-1700 晚班：1600-2200 ★福利： 當日工時滿8小時享員工餐 定期考核調薪 端午品牌禮金 年節紅包 員購優惠
